Frying chicken, like a bomb, burns your face. Why?

According to local media such as G1, a man took a bite of 'Cosigna' at a fast food restaurant in Curitiba, Brazil, on the 13th (local time) and exploded like a 'bomb'.
Coscinha is a popular Brazilian snack that is coated with breadcrumbs and dough on chopped chicken and then fried.
In the video, when a female employee wrapped the coscinha in paper and brought it out, the male customer took a bite with his colleague.
At the moment, fried food exploded like a bomb, and dough and contents splattered on the man's hands and face.
Footage also captured steam coming out.
The store owner recommended going to the hospital because he seemed to have been burned by looking at the dough on the man's face.
The owner said "It's the first time in my business that I've ever done business like this" and "I made it the same as any other time, but I don't know why"
He added "It was a cosigna about five minutes after it was taken out of the fryer."
Experts explained that it was due to 'Air Pocket'.
An expert explained that "the air between the dough and the stuffing material expanded during the frying, and the moment it was bitten in the mouth, the pressure was released out all at once."" One chef advised "It's better to open the cosigna with your hands to let the steam come out before you eat it."
The customer was treated with burns on his mouth, face, and hands.
