According to foreign media such as the New York Post, researchers at the University of California, Davis conducted a study on why red wine causes severe hangovers.
Red wine contains a lot of quercetin, a phenolic compound found in grape skins.
The researchers explained that this component has been shown to inhibit ALDH, an enzyme that breaks down acetaldehyde produced in the human body when breaking down alcohol.
In other words, quercetin interferes with alcohol metabolism, which accumulates a toxic compound called acetaldehyde, causing headaches.
The researchers explained that "a high accumulation of acetaldehyde causes the skin to turn red and accompanied by headaches".
Headaches are the result of the body's slower metabolic stages when it breaks down alcohol.
In addition, the study also investigated whether sulfite, biogenic amine, and tannin components were one of the causes of red wine hangovers. Sulfite is found mostly in all types of wines and has long been blamed for alcohol-induced hangovers.
However, the amount of sulfite in wine (20mg per glass) was not enough to affect hangovers. Amines and tannins were also less associated with hangovers.
The researchers also wrote that `the more exposed grapes are exposed to sunlight, the more quercetin is produced.'"If you make wine from these grapes, it can cause more severe hangovers."," he said.
